Required: One Kahawai…
Cut the Kahawai open and add some salt and pepper.
Add brown sugar (lots of it)
Then place in the fridge for a minimum of 4 hours. Can also be left in the fridge over night.
Very important tip: place tinfoil in the smoker and place the wood chips on the tinfoil. This way it will be easy to clean the smoker afterwards.
Smoke for about 20 – 25 mins.
And voila!! Tasty smoked Kahawai…
